Ingredients

  • 1 tbsp butter
  • 1 Ontario Gala apple, peeled and thinly sliced
  • ½ tsp cinnamon, divided
  • ½ cup butter, melted
  • 1 cup packed brown sugar
  • 1 Ontario egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • ¼ tsp salt
  • ⅛ tsp nutmeg
  • 3/4 cup white chocolate chips, divided

Instructions

  1. Preheat oven to 350F. Line an 8x8 baking dish with parchment paper.
  2. Heat a medium non-stick frying pan over medium-low heat. Melt 1 tbsp butter, add apple and cook, stirring occasionally until very soft and browned and caramelized, about 12-15 minutes. Remove from heat and stir in 1/4 tsp cinnamon. Spoon into a separate small bowl and allow to cool for 5-10 minutes.
  3. Meanwhile, in a large bowl, whisk remaining ½ cup melted butter with brown sugar until combined. Whisk in egg and vanilla extract.
  4. Using a spatula, stir in flour, salt, remaining cinnamon and nutmeg. Fold in cooled apple slices and ½ cup of white chocolate chips.
  5. Pour batter into prepared pan. Smooth the top and bang the bottom on the counter to ensure batter is even in the pan. Sprinkle the remaining white chocolate chips over top.
  6. Bake in the centre of the oven for 25-30 minutes. Remove from oven, allow to cool for 15 minutes, then lift parchment paper out of the baking pan and cool completely on a wire rack. Cut into 16 squares.
