Artichoke Grilled Cheese[amd-zlrecipe-recipe:69]

  • 4 medium artichokes
  • 1 lemon, halved


  1. Squeeze juice from lemon into a large bowl filled with water and use lemon halves to rub the artichokes as trimming to prevent browning.
  2. Remove the outer leaves of artichoke until only pale tender inner leaves remain. Cut off top third of artichoke. Cut off all but 1-inch of the stem; peel and trim the outer layer of stem, as well as the base.
  3. Cut artichokes in half lengthwise. Scrape out the hair-like filaments and thorny inner leaves. Add artichoke halves to lemon water and repeat with remaining artichokes.
  4. Cook artichoke halves in to boiling salted water for 8 to 12 minutes or until tender. Drain and cool to use.
