- 4 medium artichokes
- 1 lemon, halved
- Squeeze juice from lemon into a large bowl filled with water and use lemon halves to rub the artichokes as trimming to prevent browning.
- Remove the outer leaves of artichoke until only pale tender inner leaves remain. Cut off top third of artichoke. Cut off all but 1-inch of the stem; peel and trim the outer layer of stem, as well as the base.
- Cut artichokes in half lengthwise. Scrape out the hair-like filaments and thorny inner leaves. Add artichoke halves to lemon water and repeat with remaining artichokes.
- Cook artichoke halves in to boiling salted water for 8 to 12 minutes or until tender. Drain and cool to use.
