These mini quiches are great to make ahead and keep on hand for the week for a quick and healthy breakfast. This recipe from Grimmway Farms uses fresh and delicious broccoli straight from the farm.

Broccoli and Cheese Mini Quiche

  • 1 tbsp. olive oil
  • 2 cups Cal-Organic Broccoli
  • ½ cup Cal-Organic Green Onions
  • 7 large eggs
  • ½ cup milk
  • ½ cup cheddar cheese, grated
  • Salt and pepper, to taste


  1. Preheat oven to 375°Fahrenheit. Lightly spray a muffin pan with cooking spray and set aside.
  2. Coarsely chop broccoli and chop green onion.
  3. Place a large skillet over medium heat and add the olive oil and broccoli. Cook for 5 minutes and remove from heat.
  4. Add the eggs, milk, grated cheese, green onions, salt and pepper into a medium sized bowl and mix thoroughly.
  5. Pour the mixture into each muffin cup. Bake for 15 minutes, let cool 10 minutes and enjoy!
