These Caramelized Nectarine Higher Protein Muffins are packed with caramelized Ontario nectarines and spices and a hint of almond flavor, and each muffin contains 7 grams of hunger-busting protein! I recommend at least 1-2 servings of fruits every day, and these muffins are a great way to incorporate fruit into your meals or snacks.

The extra protein in these muffins comes from oat flour, Greek yogurt, and skim milk powder. Add some nut butter to them for an even bigger protein boost. Local produce hasn’t spent hours travelling to its destination. It’s picked at the peak of ripeness for maximum flavor and nutrients. Look for the ‘pick me, I’m local’ signs in your supermarket to point you towards fresh Ontario produce! If you prefer, you can substitute Ontario pears for the nectarines in this recipe.

  • 1.5 cups oat flour
  • 1/4 cup skim milk powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 cup full fat plain Greek yogurt
  • 2 eggs
  • 1/3 cup unsalted butter
  • 2 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1.5 cups chopped nectarines


  1. Preheat oven to 350F.
  2. Combine the dry ingredients in a large bowl and set aside.
  3. In a small skillet, melt butter and brown sugar together, then add nectarines.
  4. Cook on low heat, stirring often, until nectarines are soft and caramelized. Remove from heat.
  5. In a blender, combine yogurt, eggs, vanilla, almond extract and blend until smooth.
  6. Fold wet ingredients into the dry ingredients, then fold in nectarines.
  7. Divide equally into greased or lined muffin tin and bake at 350F until a toothpick inserted comes out clean, around 45 minutes.
