We love oatmeal so much, and we love it more when it’s pink and sweet :) It’s beet season in Ontario and we love to make the most of it beyond Beet salad. Today’s Overnight Oats don’t require any cooking, however you can cook the mixture if you’re rushed. Another thing we love is to adjust the consistency to our personal taste, so my older daughter loves a smooth saucy oatmeal, while I love a thick Oatmeal.
The sweetener I’m using is honey, however you can use your favorite! And finally, the type of milk you use can be dairy or non dairy based, the recipe works just as well :) ENJOY

Ingredients
- Milk Mixture:
- 2 1/2 cups Milk (add one extra cup for a saucy oatmeal)
- 1 large cooked Ontario Beet (or two smaller ones)
- 2 -3 Tablespoons Honey
- 1 teaspoon vanilla
- Oat Mixture: (In each mason jar)
- 1 1/2 Tablespoon Quick cooking Oats
- 1/2 teaspoon chia seeds
- Garnish:
- Coconut shreds, Pistachios, chia seeds, more honey
Instructions
- Use an immersion blender or processor and add all the milk mixture in and blend until smooth.
- Take 4 mason jars ( 1 cup capacity each) and add in the oat chia mixture in each.
- Fill up the mason jar with the milk mixture (about 2/3 cup) and then seal the jar and give it a shake to blend in the oats and milk together.
- Refrigerate the mixture overnight until set.
- Enjoy with your favorite garnishes the next morning!
