  • 1 ½ cups large flake/rolled oats
  • 1 cup oat flour
  • 1 tsp cinnamon
  • ¼ tsp cardamon
  • ¼ tsp nutmeg
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ up canola oil
  • ¼ cup brown sugar
  • ¼ cup unsweetened applesauce
  • 1 egg
  • ½ tsp vanilla extract
  • 2 cups chopped Ontario pears (I used Bartlett pears)
  • ¼ cup chopped walnuts

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking sheet.
  2. In a large bowl, combine the oats, oat flour, spices, baking powder, baking soda and salt. Mix to combine. In another bowl, using a fork or a whisk, mix the oil, brown sugar, applesauce, egg and vanilla until well combined. Add the dry ingredients to the wet and mix until almost incorporated. Then fold in the pears and walnuts.
  3. Using a ¼ measure or two spoons, form the batter into rounds and place on a baking sheet. Bake in a preheated oven for 15 mins until the bottoms are lightly browned and the tops are firm.
  4. Cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely.

Yield: 16 cookies
