Mediterranean Tomato Bread Salad

My Grandpa made us bread salads all the time. It was like his version of croutons, only he made it using flatbread or Pita bread. The bread is cut up and toasted on the stove with fresh herbs, garlic and olive oil until toasty.Juicy ON tomatoes are so sweet and seasonal right now, they make the perfect summer salad on their own with just a pinch of salt and olive oil. Here it’s paired with this toasty bread chunks, feta cheese, shallots, lots of fresh mint, oregano and a simple lemon juice dressing.
