Roasted Asparagus Pasta with Prosciutto

Ontario asparagus and prosciutto are a classic combination so why not making it a pasta?



For the dressing:

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons lemon juice, freshly squeezed
  • 1/2 cup freshly grated parmesan
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Salt & pepper, to taste

For the pasta

  • 1 lbs Ontario asparagus, ends trimmed
  • 2 tablespoons extra virgin olive oil
  • Salt & pepper, to taste
  • 1 lbs short pasta, cooked to al dente
  • 2 cups Ontario cherry tomatoes, halved
  • 150 grams prosciutto, sliced thin
  • Freshly grated parmesan, to finish


  1. Step 1

    For the dressing:* Whisk together all ingredients until well combined. Season to taste with salt & pepper. Set aside until ready to use.
  2. Step 2

    For the pasta:* Toss asparagus with olive oil, salt & pepper. Transfer to a baking sheet & roast until tender, about 12 minutes. Dice into 1-inch pieces. * To a large serving bowl add pasta, cherry tomatoes, roasted asparagus & prepared dressing. toss until well coated. Finish with strips of prosciutto & freshly grated parmesan. Can be enjoyed hot or cold!
