This is a simple yet luxurious toast. Starting with Greenhouse cherry tomatoes grown in Ontario (which are so sweet and juicy, available all seasons and sustainably grown). When roasted in olive oil and herbs, the cold burrata is added at the end and just allowed to soften up into the soft tomatoes.
✅You can scoop up the tomato, garlic, herb and Burrata right out of the baking pan with bread instead of serving it over toast.
✅If you can’t find Burrata, you can use fresh mozzarella.
✅This roast tomato and burrata can be served over cooked pasta with extra basil for a tasty pasta dish.
-Preheat the oven to 375 degrees F.
-In an oven safe dish, add 2 cups of Greenhouse tomatoes
-Add in 5 cloves of smashed garlic, fresh thyme sprigs, seasoning to your taste and chilli flakes (optional)
-cover that with about 2/3 cup quality olive oil and roast for 18-22 minutes until the garlic is golden and the tomatoes have softened.
-In the meantime, toast your bread
-Remove the Burrata cheese from the water
-When the tomatoes are ready, add in the burrata cheese right over and let the cheese warm up from the heat of the dish.
-Finish off with plenty of fresh basil.
-Enjoy over pasta, chicken, toast, meat, or as is!
