Cucumber boats make tuna salad taste so much better! I’m using Greenhouse cucumbers grown in Ontario–sustainably grown, always seasonal, perfectly ripe and tasty! This is the perfect appetizer, finger food, snack, lunch or light dinner that you can customize however you want.

Here’s how to make it:

✅Cut your cucumber in half lengthwise

✅Use a spoon to hollow the seeds and create a boat like shape for each cucumber half.

✅Don’t throw out those seeds! Mix them with your smoothies.

✅Now make your favorite tuna salad or use my recipe below.

✅Pile the salad over the hollowed cucumber half to fill in the boats.

✅Use a sharp knife and cut the cucumber into bite size pieces–about an inch long.

✅Garnish with herbs, chili flakes, a squirt of lemon and enjoy!

✅Tuna salad recipe (or use your favorite salad)✅

1/4 cup Mayo

1 tablespoon Dijon Mustard

1/2 red onion/shallot diced

2 tablespoons minced dill (use parsley/cilantro if you don’t like dill)

1 tablespoon lemon juice

salt and pepper to taste

chilli flakes (optional)

1 can tuna packed in water

✅Mix all ingredients in a bowl except for the tuna. Add the tuna last and mix it in to make the tuna salad.
