Spiced Ontario Pear Shortcakes
You don’t always need strawberries to have shortcakes. Fresh Ontario pears are also delicious with this classic dessert!

For the Shortcakes
- 1 1/2 Cups All-Purpose Flour
- 1/3 Cup Quick-Cooking Oats
- 1/3 Cup Brown Sugar
- 2 Tsp. Baking Powder
- 3/4 Tsp. Cinnamon
- 1/4 Tsp. EACH: Ground Ginger, Salt, Nutmeg
- 1/4 Cup Unsalted Butter, Cold and Cubed
- 1/2 Cup Milk
- 1 Egg Yolk
- 1 Tsp. Granulated Sugar
For the Filling
- 4 Firm, Ripe Ontario Pears, Peeled, Cored, and Sliced
- 2 Tbsp. Lemon Juice
- 3 Tbsp. Unsalted Butter
- 1/3 Cup Brown Sugar
- 1/4 Tsp. Nutmeg
- 1 Tsp. Vanilla
For the Topping
- To Preference Sweetened Whipped Cream or Ice Cream
Instructions
Step 1
In bowl, combine flour, oats, brown sugar, baking powder, cinnamon, ginger, salt and nutmeg.Step 2
Cut in butter until butter pieces are pea-sized. Stir in milk and about 2 tbsp (25 mL) cold water and; mix to form a soft dough that leaves side of bowl.Step 3
Divide dough into 6 equal pieces and shape into rounds. Place on parchment lined baking pan 2-inches (5 cm) apart. Press down each round gently to about ½-inch (1 cm) thickness. Let stand 5 minutes.Step 4
Beat egg yolk with 1 tbsp (15 mL) water. Brush over each dough round and sprinkle tops with granulated sugar.Step 5
Bake at 375°F (190°C) for 20 to 25 minutes or until golden. Cool on racks.Step 6
For the Filling: In large bowl, combine pear slices with lemon juice.Step 7
In large skillet, melt butter over medium-high heat.Step 8
Add pears and cook stirring often about 2 minutes. Stir in brown sugar and nutmeg.Step 9
Reduce heat to low and simmer for 4 to 5 minutes or until pears are tender, stirring occasionally.Step 10
Remove from heat and stir in vanilla.Step 11
To Assemble: Split each shortcake in half horizontally using a serrated knife. Top each base with ¼ cup (50 mL)warm pear mixture, whipped cream or ice cream. Sandwich with shortcake tops.
