Ontario Carrot & Parsnip Gratin
Every holiday meal needs a gratin! This carrot and parsnip version uses fresh Ontario carrots to bring colour and rich flavour to this already indulgent dish. Try it for a special occasion, or as a simple weeknight meal.

- 1 Ontario Onion, Sliced
- 4 Large Ontario Carrots, Thinly Sliced
- 4 Parsnips, Thinly Sliced
- 3 Cloves Garlic, Sliced
- 5 Tbsp. Unsalted Butter, Divided
- 3 Tbsp. All-Purpose Flour
- 2 Tsp. Dijon Mustard
- 2 Cups Whole Milk
- To Taste Salt & Pepper
- 2 Cups Grated Cheddar Cheese, Divided
- 1 Cup Homemade Bread Crumbs
Instructions
Step 1
To a medium size baking dish, toss together onions, carrots, parsnips & garlic until evenly mixed. Set aside.Step 2
To a saucepan over medium heat melt together 3 tablespoons butter & flour. Once flour has cooked stir in Dijon mustard, milk, cream, salt & pepper. Bring to a gentle simmer. Continuously stirring, cook until sauce thickens, about 10 minutes.Step 3
Remove from heat & whisk in the cheese until fully incorporated. Pour mixture over the prepared vegetables.Step 4
For the topping, stir together the remaining butter & bread crumbs. Season with salt & pepper.Step 5
Evenly sprinkle bread crumbs over the dish, cover with foil & bake at 375(f) degrees for 45 minutes.Step 6
Remove foil. Continue baking until the top is golden & vegetables are cooked throughout, about 45 minutes. Let stand for 5 minutes before serving.
