Ontario Asparagus & Bacon Breakfast Casserole

- 3 Tbsp. Olive Oil
- 3 Cloves Garlic, Minced
- 1 Small Onion, Diced
- 1 Lb. Ontario Asparagus, Diced
- 9 Large Eggs
- 2 Tbsp. Spicy Brown Mustard
- 1 Cup Whole Milk
- To Taste Salt & Pepper
- 2 Cups Old Cheddar Cheese, Grated
- 8 Strips Crispy Bacon, Diced
- 1 Lb. Frozen Potatoes, Shredded
- To Garnish Grated Parmesan Cheese
Instructions
Step 1
Preheat the oven to 350(f) degrees. Grease a 9 by 12 inch deep baking dish.Step 2
To a skillet over medium heat add the olive oil, garlic & onions.Step 3
Once fragrant, add the asparagus. Season with salt & pepper. Cook until tender, about 4 minutes. Remove from heat & let cool slightly.Step 4
In a large mixing bowl whisk together eggs, mustard, milk, salt & pepper until well combined. Fold in the cheese, bacon, shredded potatoes & asparagus mixture.Step 5
Transfer to the prepared baking dish. Bake until the edges are golden & the centre is fully cooked, about 40 to 45 minutes. Let stand at room temperature for 15 minutes before slicing & serving.
