Grilled Gochujang Mushroom Skewers
Fire up the grill & spice things up with my grilled gochujang mushroom skewers made with Ontario portobello & king oyster mushrooms!

Ingredients

- 3 tablespoons gochujang
- 3 tablespoons turbinado or coconut sugar
- 3 teaspoons rice vinegar
- 2 teaspoons soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 350 grams Ontario portobello mushrooms, sliced
- 350 grams Ontario king oyster mushrooms, sliced
- Salt & pepper, to taste
- Thinly sliced green onion, to garnish
- Sesame seeds, to garnish
- Sliced lime, to garnish
Instructions
Step 1
In a large mixing bowl whisk together gochujang, sugar, rice vinegar, soy sauce, sesame oil, ginger & garlic until well combined.Step 2
Add mushrooms & toss until well coated. let marinate for 30 minutes.Step 3
Evenly thread mushrooms onto six skewers. season skewers with salt & pepper. grill for 2 to 3 minutes on each side, over medium high heat.Step 4
Transfer to serving plate. Garnish with green onion, sesame seeds & limes.
