Apple Cinnamon Doughnut Cobbler
This Apple Cinnamon Doughnut Cobbler features saucy Ontario-grown apples under a tender and golden biscuit lid. The biscuits are spiked with nutmeg, brushed with melted butter, and dusted with cinnamon sugar for that tell-tale doughnut taste. Apple Filling:
- 6 small Ontario-grown gala apples, peeled and sliced
- ¼ cup light brown sugar
- 2 tbsp granulated sugar
- 3 tbsp all-purpose flour
- 1 lemon, juiced
- 2 tsp vanilla extract
- 1 tsp fresh ginger, shredded
- 1 tsp ground cinnamon
- ¼ tsp ground cardamom
- ⅛ tsp ground cloves
Biscuit Topping:
- 1 ½ cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ¼ tsp nutmeg
- ¼ tsp salt
- 6 tbsp cold unsalted butter, cut into cubes
- ½ cup whole milk
- 1 large egg
Cinnamon Sugar:
- 2 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- ¼ tsp salt
Instructions
Step 1
Preheat the oven to 350°F. Grease a small 6 x 9” casserole dish and set it aside.Step 2
Place the apples in a large bowl. Add the remaining Apple Filling ingredients and toss to coat. Pour the apples into the prepared casserole dish and set it aside.Step 3
In another bowl whisk to combine the flour, sugar, baking powder, nutmeg, and salt. Add the butter and cut it into the flour mixture until the butter pieces are pea-sized. Form a well in the center and add the milk and the egg. Whisk to break up the egg. Using a rubber spatula, gradually introduce dry ingredients to the wet until a dough forms.Step 4
Dot the apples with the biscuit dough and place the cobbler in the oven. Bake for 40-45 minutes or until golden. While the cobbler is in the oven, whisk to combine the sugar, cinnamon, and salt.Step 5
Take the cobbler out of the oven. Brush the biscuits with the melted butter and dust them with the cinnamon sugar. Spoon the cobbler into bowls and top each serving with a scoop of vanilla ice cream.
