Curried Ontario Nectarine & Chicken Salad Stuffed Pita

Use this flavourful filling to stuff small or regular size pitas. A great way to use leftover roast chicken.

Filling

  • 2 Ontario Nectarines, Pitted and Diced (About 1 1/2 Cups)
  • 2 Cups Ontario Chicken, Cooked and Diced
  • 1/3 Cup Ontario Greenhouse Cucumber, Diced
  • 2 Ontario Green Onions, Sliced
  • 1/4 Cup Fresh Coriander, Chopped
  • 4 Regular or Whole Wheat Pita Breads, Halved
  • Handfuls Lettuce Leaves

Dressing

  • 3 Tbsp. Low-Fat Mayonnaise
  • 3 Tbsp. Plain Yogurt
  • 2 Tbsp. Fresh Lime Juice
  • 2 Tsp. Ontario Honey
  • 1 Tsp. Grated Fresh Ginger
  • 1 Tsp. (Or to Taste) Curry Powder
  • To Taste Salt & Pepper

Instructions

  1. Step 1

    Place all salad ingredients in large bowl.
  2. Step 2

    Combine all dressing ingredients in a small bowl.
  3. Step 3

    Toss with salad mixture to coat evenly. Use to fill pita pockets lined with lettuce.
