Curried Ontario Nectarine & Chicken Salad Stuffed Pita
Use this flavourful filling to stuff small or regular size pitas. A great way to use leftover roast chicken.

- 2 Ontario Nectarines, Pitted and Diced (About 1 1/2 Cups)
 - 2 Cups Ontario Chicken, Cooked and Diced
 - 1/3 Cup Ontario Greenhouse Cucumber, Diced
 - 2 Ontario Green Onions, Sliced
 - 1/4 Cup Fresh Coriander, Chopped
 - 4 Regular or Whole Wheat Pita Breads, Halved
 - Handfuls Lettuce Leaves
 
Dressing
- 3 Tbsp. Low-Fat Mayonnaise
 - 3 Tbsp. Plain Yogurt
 - 2 Tbsp. Fresh Lime Juice
 - 2 Tsp. Ontario Honey
 - 1 Tsp. Grated Fresh Ginger
 - 1 Tsp. (Or to Taste) Curry Powder
 - To Taste Salt & Pepper
 
Instructions
Step 1
Place all salad ingredients in large bowl.Step 2
Combine all dressing ingredients in a small bowl.Step 3
Toss with salad mixture to coat evenly. Use to fill pita pockets lined with lettuce.
