Chicken Wings with Roasted Red Pepper BBQ Sauce with Cucumber Ranch

Roasted Red Pepper BBQ Sauce
- 2 red peppers, cut in half
- 2 cloves garlic, peeled
- 3/4 cup brown sugar
- 1/2 cup malt vinegar
- 1/4 cup molasses
- 1/4 cup white vinegar
- 1/4 cup soy sauce
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 2 tsp smoked paprika
- 1 1/2 tsp salt
- 1 tsp cayenne
- 4 tsp cornstarch
- 1 tbsp water
Cucumber Ranch
- 2 mini cucumbers, shredded
- 1 (250 ml) tub sour cream
- 1/3 cup mayo
- 1/4 cup fresh dill, tightly packed
- 1 clove garlic, peeled
- 1 tbsp Dijon mustard
- 1 tsp sugar
- 1 tsp salt
- 1/4 tsp cayenne
To Assemble
- 2 lbs chicken wings
- 2 ½ tsp baking powder
- 1 tsp salt

Instructions
Step 1
Turn the oven on to broil. Place the peppers cut side down on a baking sheet lined with parchment paper. Put the baking sheet in the oven and broil for 15 minutes or until the skin turns black.Step 2
Peel the skin and remove the seeds when the peppers are cool enough to handle. Place the peppers in a food processor and add the garlic. Blitz until very smooth.Step 3
Pour the pepper puree into a small saucepan and add all the remaining ingredients except the cornstarch and water. Whisk to combine. Place the mixture over medium-high heat and bring it to a boil.Step 4
While you’re waiting for the sauce to boil, place the cornstarch and water into a small bowl and whisk to combine. Pour the cornstarch mixture into the boiling sauce while whisking constantly. Continue to cook until the sauce thickens slightly. Take it off of the heat and transfer it to a heat-proof jar. Set aside to cool.Step 5
Place the shredded cucumbers in a cheesecloth and squeeze to remove excess moisture. Set it aside.Step 6
Place the remaining Cucumber Ranch ingredients in a food processor and blitz until smooth. Transfer the dip to a bowl and fold in the cucumber. Chill until ready to serve.Step 7
Preheat the oven to 425°F. Line a large baking sheet with greased parchment paper. Set it aside.Step 8
Place the wings in a large bowl and add the salt and baking powder. Toss to coat. Arrange the wings on the baking sheet and transfer them to the oven. Bake for 40 minutes, turning the wings once.Step 9
Place the wings in a large bowl. Add ¾ of a cup of the BBQ sauce and toss to coat. Transfer the wings to a platter and place a bowl of the Cucumber Ranch on the side for dipping. Serve immediately.
