Dark Chocolate Plum Brownies
Dark Chocolate Plum Brownies featuring juicy wedges of Ontario tender fruit early goldens and red plums. These jewel-toned beauties bring a refreshing tartness to these otherwise intensely fudgy brownies. Made with high-quality 70% dark chocolate and finished with a kiss of sea salt, these treats are a chocolate-lovers delight.When selecting plums for this dessert, select fruit with taut skin and flesh that yields slightly under pressure. If the plums seem underripe, place them in a paper bag and leave them to ripen at room temperature. Ripe plums can be stored in the fridge to extend their shelf life. To pit, simply slice along the seam of the plum and twist to open. Remove the pit and chop away.

- 255g (9oz) dark chocolate, coarsely chopped
- ½ cup + 2 tbsp unsalted butter, cut into cubes
- 3 large eggs, room temperature
- 1 cup granulated sugar
- 1 ½ tsp vanilla bean paste
- ⅔ cup all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- 5 early golden yellow plums, cut into wedges
- 2 red plums, cut into wedges
- High-quality sea salt, for sprinkling
Instructions
Step 1
Preheat the oven to 325°F. Grease and line an 8×8 pan with parchment paper and set aside.Step 2
Place the butter and chocolate in a small saucepan over medium-low heat. Stir until both melt into one another. Stir in the sugar and cook until the mixture appears less grainy. Take the pan off of the heat.Step 3
Add the eggs to the chocolate mixture one at a time and stir in the vanilla. Sift the flour into the chocolate mixture and add the salt and baking powder. Fold the dry ingredients into the chocolate until no streaks remain.Step 4
Pour the batter into the prepared pan and arrange the plum slices on top. Transfer the brownies to the oven and bake for 45 minutes.Step 5
Let the brownies cool, then remove from the pan. Sprinkle with the sea salt before slicing and serving.
