Grilled Gochujang Mushroom Skewers

Fire up the grill & spice things up with my grilled gochujang mushroom skewers made with Ontario portobello & king oyster mushrooms!

Ingredients

  • 3 tablespoons gochujang
  • 3 tablespoons turbinado or coconut sugar
  • 3 teaspoons rice vinegar
  • 2 teaspoons soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 350 grams Ontario portobello mushrooms, sliced
  • 350 grams Ontario king oyster mushrooms, sliced
  • Salt & pepper, to taste
  • Thinly sliced green onion, to garnish
  • Sesame seeds, to garnish
  • Sliced lime, to garnish

Instructions

  1. Step 1

    In a large mixing bowl whisk together gochujang, sugar, rice vinegar, soy sauce, sesame oil, ginger & garlic until well combined.
  2. Step 2

    Add mushrooms & toss until well coated. let marinate for 30 minutes.
  3. Step 3

    Evenly thread mushrooms onto six skewers. season skewers with salt & pepper. grill for 2 to 3 minutes on each side, over medium high heat.
  4. Step 4

    Transfer to serving plate. Garnish with green onion, sesame seeds & limes.
