One-Step Ontario Mushroom Soup

This velvety mushroom soup celebrates the earthy, umami-rich flavors of fresh local mushrooms. With walnuts for body, tangy goat cheese for creaminess, and bright lemon zest to balance it all, this blender soup transforms simple ingredients in to something surprisingly luxurious, with no stovetop required.

  • 454g Ontario Mushroom Mix, Roughly Chopped (See Notes)
  • 1 1/2 Cups Walnuts
  • 1/4 Cup Goat Cheese
  • 1 Shallot, Chopped
  • 1 Clove Garlic, Smashed
  • 3 Cups Stock (Vegetable, Chicken, or Beef)
  • 2 Tbsp. Extra Virgin Olive Oil
  • Salt and Pepper To Taste

Instructions

  1. Step 1

    Add mushrooms, walnuts, goat cheese, shallot, garlic, lemon zest, stock, and olive oil to a high-speed blender. Blend on high for 6-8 minutes, or until the soup is completely smooth and piping hot. Taste and adjust seasoning with salt and pepper. Serve immediately with optional toppings

Optional Toppings:

  • Soda Crackers
  • Crumbled Goat Cheese
  • Fresh Chopped Chives

Notes:

Mushroom Mix: We recommend a combination of cremini, shiitake, oyster, and portobello forcomplex, full-bodied mushroom flavor. Feel free to use whatever mix is fresh and local.

No high-speed blender? Blend ingredients using an immersion blender or food processor until smooth, then transfer to a pot or microwave-safe container and heat until steaming hot before serving.

Stock Choice: Vegetable stock keeps it vegetarian, while chicken or beef stock adds extra depth.
