Ontario Apple Crisp
Gingersnaps provide a subtle ginger flavour and a crisp topping for this apple crisp. Serve with a small scoop of vanilla ice cream or frozen yogurt, if desired.

For the Topping:
- 1/2 Cup Crushed Gingersnap Cookies
- 1/2 Cup Rolled Oats, Old Fashioned or Quick (Not Instant)
- 2 Tbsp. Packed Brown Sugar
- 2 Tbsp. All-Purpose Flour
- 1/4 Cup Melted Butter
For the Apple Mixture:
- 4 Cups Ontario Apples, Peeled and Chopped (Empire or McIntosh)
- 2 Tbsp. Packed Brown Sugar
Instructions
Step 1
Butter 6 – ¾ cup (175 mL) ramekins; place on a baking sheet for easier handling. Preheat oven to 350°F (180°C).Step 2
Topping: Place 4 or 5 gingersnaps in a sealable bag and crush with small pot or rolling pin. Measure ½ cup (125 mL) into a medium bowl. Add oats, brown sugar and flour; stir to combine. Stir in butter until crumbly.Step 3
Apple mixture: In large bowl place chopped apples. Add brown sugar and toss with apples.Step 4
Divide apple mixture between ramekins.Step 5
Sprinkle topping over apples, pressing down.Step 6
Bake 25 to 30 minutes or until apples are tender and topping is golden brown.
