- 1/4 Cup Granulated Sugar
- 2 Tbsp. Cornstarch
- 1 Tbsp. Baking Powder
- 1/2 Tsp. Salt
- For Serving Whipped Cream (Optional)
- For Serving Cinnamon Sugar (Optional)
Instructions
Step 1
For the Apple Pie Filling:Melt the butter in a saucepan over medium heat, then add the apples and sauté for 2-3 minutes. Stir in 3 tablespoons of water, lemon juice, brown and white sugar, and cinnamon. Bring to a simmer, stirring occasionally, and cook for 5-7 minutes until apples are tender but still hold their shape. In a small bowl, mix the remaining 2 tablespoons of water with the cornstarch, then pour it into the apples. Stir until thickened, then remove from the heatStep 2
For the Waffles:In a large mixing bowl, combine the milk, melted butter, eggs, and vanilla. Add the flour, sugar, cornstarch, baking powder, and salt.Step 3
Stir until just combined. Let the batter rest for 10 minutes while the waffle iron preheats. (This helps create fluffier waffles.)Step 4
Butter the waffle iron. Pour enough batter to thinly cover the bottom (about 1/4-1/3 of a cup, depending on your waffle iron size). Spoon 1-2 tablespoons of apple filling in the center, then top with just enough batter to cover the apples.Step 5
Close the waffle iron and cook until golden and cooked through, about 3-5 minutes. Keep finished waffles warm in a 200°F oven while repeating the process with the remaining batter and filling.Step 6
Serve the finished apple waffles warm with an extra spoonful of the apple filling and optional whipped cream and cinnamon sugar.
Notes: This apple filling recipe is thinner than a typical apple pie filling; don’t use it to make a pie! Use this apple filling recipe for these waffles, or topping for ice cream.
