Ontario Apple Pie Waffles

Golden waffles stuffed with homemade apple pie filling make breakfast unforgettable. This recipe features Ontario Ambrosia apples — naturally sweet with a honey-like flavour that holds up beautifully when cooked. Quick enough for a weekday morning, special enough to impress. Apple Pie Filling:

  • 4 Ontario Apples, Peeled and Diced Into 1/4-Inch Cubes
  • 3 Tbsp. Butter
  • 5 Tbsp. Water, Divided
  • 1 Tbsp. Lemon Juice
  • 2 Tbsp. Brown Sugar
  • 2 Tbsp. White Sugar
  • 1 Tsp. Cinnamon
  • 2 Tsp. Corn Starch

Waffles:

  • 2 Cups Milk
  • 1/2 Cup Butter, Melted (Plus More For Waffle Iron)
  • 2 Large Ontario Eggs, Beaten
  • 2 Tsp. Vanilla Extract
  • 2 Cups All-Purpose Flour
  • 1/4 Cup Granulated Sugar
  • 2 Tbsp. Cornstarch
  • 1 Tbsp. Baking Powder
  • 1/2 Tsp. Salt
  • For Serving Whipped Cream (Optional)
  • For Serving Cinnamon Sugar (Optional)

Instructions

  1. Step 1

    For the Apple Pie Filling:Melt the butter in a saucepan over medium heat, then add the apples and sauté for 2-3 minutes. Stir in 3 tablespoons of water, lemon juice, brown and white sugar, and cinnamon. Bring to a simmer, stirring occasionally, and cook for 5-7 minutes until apples are tender but still hold their shape. In a small bowl, mix the remaining 2 tablespoons of water with the cornstarch, then pour it into the apples. Stir until thickened, then remove from the heat
  2. Step 2

    For the Waffles:In a large mixing bowl, combine the milk, melted butter, eggs, and vanilla. Add the flour, sugar, cornstarch, baking powder, and salt.
  3. Step 3

    Stir until just combined. Let the batter rest for 10 minutes while the waffle iron preheats. (This helps create fluffier waffles.)
  4. Step 4

    Butter the waffle iron. Pour enough batter to thinly cover the bottom (about 1/4-1/3 of a cup, depending on your waffle iron size). Spoon 1-2 tablespoons of apple filling in the center, then top with just enough batter to cover the apples.
  5. Step 5

    Close the waffle iron and cook until golden and cooked through, about 3-5 minutes. Keep finished waffles warm in a 200°F oven while repeating the process with the remaining batter and filling.
  6. Step 6

    Serve the finished apple waffles warm with an extra spoonful of the apple filling and optional whipped cream and cinnamon sugar.

Notes: This apple filling recipe is thinner than a typical apple pie filling; don’t use it to make a pie! Use this apple filling recipe for these waffles, or topping for ice cream.
