Ontario Pear & Apple Breakfast Bars

Made with naturally sweet Ontario pears or apples, along with pantry staples like oats, flour, cinnamon, and a touch of brown sugar, these bars have all the familiar flavours of pie in a nourishing breakfast or snack. They’re perfect for busy mornings, lunchboxes, or an after-school snack with a glass of milk. Make a batch this weekend and thank yourself when the week gets busy!

Filling

  • 4 Medium Ontario Pears OR Ontario Apples, Peeled, Cored, and Diced
  • 1 Tbsp. Brown Sugar
  • 1 Tsp. Ground Cinnamon
  • 1/4 Cup Water
  • 1 Tbsp. Chia Seeds

Bottom & Crumb Topping

  • 1/3 Cup Unsalted Butter, Melted
  • 1/4 Cup Brown Sugar
  • 1/3 Cup Milk
  • 1/2 Cup Whole Wheat Flour
  • 1/2 Cup All-Purpose Flour
  • 1 1/2 Cups Rolled Oats
  • 1 Tsp. Cinnamon
  • Pinch Salt

Instructions

  1. Step 1

    Add all the filling ingredients, except for the chia seeds to a pot. Cover and bring to a gentle boil over medium heat. Reduce the heat to low, and cook uncovered for 10 minutes or until the pears/apples have softened and are fork tender. Remove from heat.
  2. Step 2

    Mash the pears/apples slightly with a fork; some small pieces are okay (the filling should be more jam like than applesauce). Stir in the chia seeds. Allow the mixture to thicken for about 15 minutes as it cools.
  3. Step 3

    For the Bottom & Crumb Topping Preheat oven to 375°F. Line an 8×8” baking dish with parchment paper.
  4. Step 4

    In a bowl, whisk the melted butter, brown sugar, and milk until combined. Add the flour, oats, cinnamon and salt. Use a fork to combine the mixture. It should be crumbly.
  5. Step 5

    Press ⅔ of the crumble mixture evenly into your lined baking dish.
  6. Step 6

    Spoon cooled apple filling onto the bottom layer and spread it evenly over the base.
  7. Step 7

    Evenly distribute the remaining crumb topping over the apple filling layer.
  8. Step 8

    Bake in the preheated oven for 30 minutes or until the apple filling is bubbling and the top is golden brown.
  9. Step 9

    Remove from the oven and let it cool completely before cutting it into squares.
