Peaches and Cream Shortcakes

For the peaches:
- 3 medium peaches, sliced
- 3 medium nectarines, sliced
- 3 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 pinch salt
For the biscuits:
- 3 cups all-purpose flour
- 1/2 cup brown sugar, lightly packed
- 2 tablespoons baking powder
- 1 teaspoon salt
- 3/4 cup unsalted butter, cold & cubed
- 3/4 cup cream
To assemble:
- 2 cups whipping cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
Step 1
For the peaches:Preheat the oven to 400(f) degrees. In a medium size baking dish, toss together peaches, nectarines, brown sugar, cinnamon, vanilla & salt until well combined. Roast fruit until softened, about 20 to 25 minutes. Let cool to room temperature.Step 2
For the biscuits:1. In a large mixing bowl stir together flour, sugar, baking powder & salt until combined. 2. Add butter & work into the dough using your hands until a crumbly mixture is formed. 3. Add the cream & stir until dough comes together. 4. Transfer to a lightly floured surface & cut into 6 biscuits. 5. Transfer to a lined baking sheet, brush the top with cream (optional) & refrigerate dough for 30 minutes to chill. 6. Bake at 400(f) for 15 to 20 minutes. Let cool to room temperature.Step 3
To assemble:1. In a large mixing bowl add whipping cream, sugar, vanilla & salt. Whisk to stiff peaks & transfer to a piping bag. 2. Carefully slice cooled biscuits in half. Begin with a layer of roasted fruit, followed by whip cream & a second layer of roasted fruit. 3. Finish with powdered sugar & serve immediately!
