Pear Fritters with Fennel

These pear fritters are crisp on the outside, soft and custardy inside, and bursting with juicy pear in every bite. The flavour of the pears balances beautifully with warm cinnamon and aromatic fennel. Finished with a sweet glaze, they’re a playful way to showcase pears at their seasonal best.

For the Fritters:

  • For Frying Neutral Oil (Peanut, Canola, Sunflower)
  • 1 1/2 Cups All Purpose Flour
  • 1/4 Cup Sugar
  • 2 1/2 Tsp. Baking Powder
  • 3/4 Tsp. Salt
  • 1 Tsp. Cinnamon
  • 1 Tsp. Fennel Seed, Crushed
  • 3/4 Cup Milk
  • 2 Eggs
  • 1 Tsp. Vanilla
  • 2 Ontario Pears, Peeled, Cored, and Diced

For the Glaze:

  • 2 Cups Icing Sugar
  • 1/4 Cup Milk
  • 1/2 Tsp. Vanilla

Instructions

  1. Step 1

    Pour the oil into a deep skillet or saucepan, ensuring to have at least 2 inches depth. Heat to 350°F
  2. Step 2

    Meanwhile, combine flour, sugar, baking powder, salt, cinnamon, and fennel seed in a medium bowl and set aside.
  3. Step 3

    To a large mixing bowl, whisk the milk, eggs, and vanilla. Add the dry ingredients to the wet and mix just to moisten the flour. Add the pears and gently fold them into the batter until they are evenly distributed and coated.
  4. Step 4

    Using a ¼ cup measuring cup or large cookie scoop, carefully drop the batter into the oil, spreading it out slowly as you do. Repeat with 3-4 more scoops.
  5. Step 5

    Fry the batter for 2 minutes per side or until deeply golden and cooked through. Transfer the fritters to a wire rack placed over a pan. Repeat with remaining batter.
  6. Step 6

    In a medium bowl, whisk the icing sugar, milk, and vanilla until smooth. While the the fritters are still warm, dunk them into the glaze and turn until coated. Return the fritters to the wire rack to drain excess glaze and cool.
  7. Step 7

    Enjoy once the glaze has set, about 10 minutes or more.

Notes:

●Use Bosc or Anjou pears for firmness, or Bartlett for a softer bite.

●Ensure not to overmix the batter, which can make the fritters tough. Lumps in the batter are completely fine.

●Dice pears just before mixing into the batter to avoid browning. If prepping ahead, toss them with a little lemon juice
