Roasted Asparagus Pasta with Prosciutto
Ontario asparagus and prosciutto are a classic combination so why not making it a pasta?


Ingredients
Servings
For the dressing:
- 1/3 cup extra virgin olive oil
- 3 tablespoons lemon juice, freshly squeezed
- 1/2 cup freshly grated parmesan
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- Salt & pepper, to taste
For the pasta
- 1 lbs Ontario asparagus, ends trimmed
- 2 tablespoons extra virgin olive oil
- Salt & pepper, to taste
- 1 lbs short pasta, cooked to al dente
- 2 cups Ontario cherry tomatoes, halved
- 150 grams prosciutto, sliced thin
- Freshly grated parmesan, to finish
Instructions
Step 1
For the dressing:* Whisk together all ingredients until well combined. Season to taste with salt & pepper. Set aside until ready to use.Step 2
For the pasta:* Toss asparagus with olive oil, salt & pepper. Transfer to a baking sheet & roast until tender, about 12 minutes. Dice into 1-inch pieces. * To a large serving bowl add pasta, cherry tomatoes, roasted asparagus & prepared dressing. toss until well coated. Finish with strips of prosciutto & freshly grated parmesan. Can be enjoyed hot or cold!
