Sweet Onion Teriyaki Bowls
These bowls feature buttery Ontario-grown sweet onions, roasted in a from-scratch teriyaki sauce. The meltingly tender onions are served with avocado wedges over rice. The dish is finished with a sprinkling of finely chopped scallions and toasted sesame seeds.

- 2 Tbsp. Neutral Oil
- 6 Sweet Ontario Onions, Peeled and Cut in Half
- 1 Tsp. Salt
- 1/2 Cup Soy Sauce
- 1/4 Cup Dark Brown Sugar
- 1/2 Cup Mirin
- 1/4 Cup Sake
- 2 Cloves Garlic, Minced
- 1 Tbsp. Fresh Ginger, Minced
- 4 Cups Cooked Short-Grain Rice
- 2 Avocados, Cut Into Wedges
- 3 Scallions, Finely Chopped
- For Sprinkling Toasted Sesame Seeds
Instructions
Step 1
Preheat the oven to 425°F.Step 2
Heat neutral oil in a large skillet until shimmering. Sprinkle the onions with salt and add them to the skillet. Fry until golden on both sides.Step 3
Transfer the onions to a 9×13 baking dish and sprinkle them with the salt. Cover the dish with tin foil and place it in the oven. Roast the onions for 30 minutes.Step 4
While the onions roast, whisk together the soy sauce, brown sugar, mirin, sake, garlic, and ginger. Pour the mixture into the skillet you used to sear the onions, then bring it up to a boil. Reduce to a simmer and simmer for 20 minutes or until thick enough to coat the back of a spoon.Step 5
Remove the onions from the oven and gently flip them. Pour the teriyaki sauce over the onions and return them to the oven. Roast for another 15 minutes.Step 6
Spoon rice into bowls and place the onions and avocado on top. Drizzle the bowls with additional teriyaki sauce and garnish with scallions and toasted sesame seeds. Serve immediately.
