Ontario Asparagus Brie & Ham Panini

Keep things simple, seasonal, and delicious with this Ontario Asparagus and Brie Ham Panini. This golden, crisp sandwich features Dijon mustard, charred Ontario asparagus, slices of triple-cream brie, and deli ham, served on a toasted baguette. Basically, it’s the exact opposite of a sad desk lunch.

For the Charred Asparagus

  • 1 Bundle Ontario Grown Asparagus, Woody Ends Removed
  • 2 Tbsp. Olive Oil
  • 1 Tsp. Kosher Salt
  • 1 Clove Garlic, Minced
  • To Taste Fresh Ground Pepper

Asparagus Brie & Ham Panini

  • 1 Baguette, Quartered
  • 1/4 Cup Dijon Mustard
  • 1 Batch Charred Asparagus
  • 8 Slices Triple-Cream Brie
  • 12 Slices Deli Ham
  • To Serve Dill Pickles

Instructions

  1. Step 1

    Place the asparagus in a bowl and add the olive oil and salt. Toss to coat.
  2. Step 2

    Transfer the asparagus to a cast-iron griddle over medium heat. Add the asparagus and grilled until lightly charred on both sides. Roughly 3 minutes a side.
  3. Step 3

    Once the asparagus is grilled, return it to the bowl. Add the garlic and fresh ground pepper. Toss to coat.
  4. Step 4

    Spread Dijon mustard on all of the baguette pieces. Top each sandwich with the asparagus spears, brie, and ham slices.
  5. Step 5

    Transfer the sandwiches to the griddle and place a heated panini press on top. Let them toast for 5 minutes or until the cheese gets nice and melty.
  6. Step 6

    Place the sandwiches on plate sand serve immediately with dill pickles on the side, if desired.
