A shortbread crust with cream cheese and apple filling and a crunchy oatmeal topping. Pretty decadent treats!
Makes 16 squares

Ingredients
- ¾ cup (175 mL) all-purpose flour
- ¼ cup (50 mL) brown sugar
- ¼ cup (50 mL) unsalted butter, cold and cut into cubes
- 1 large Ontario Apple, cored and coarsely chopped
- ½ tsp (2 mL) cinnamon
- 1 (250 g) package cream cheese, softened
- 1 Ontario Egg
- ¼ cup (50 mL) granulated sugar
- 1 tsp (5 mL) vanilla extract
- ¼ cup (50 mL) unsalted butter, softened
- ¼ cup (50 mL) brown sugar
- ½ tsp (2 mL) cinnamon
- ¼ cup (50 mL) all-purpose flour
- ½ cup (125 mL) quick-cooking rolled oats
Instructions
- Preheat oven to 375°F (190°C). Line 9-inch (23 cm ) square baking pan with foil or parchment allowing 2-inch (5 cm) overhang on 2 sides.
- Crust: In bowl, combine flour and brown sugar. Cut-in butter until mixture resembles coarse crumbs. Press gently over bottom of prepared pan. Set aside.
- Filling: In small bowl, toss chopped apple with cinnamon. In another bowl, beat cream cheese with egg, sugar and vanilla until smooth. Spread evenly over crust. Arrange chopped apple evenly over cream cheese filling; press down gently.
- Topping: In bowl, cream together butter, sugar and cinnamon. Stir in flour and oats. Crumble evenly over apples; press down gently.
- Bake for about 40 to 45 minutes or until browned and apples are tender.
- Let cool completely on rack. Lift out of pan and cut into 16 squares.
