Salt and Vinegar Smashed Potatoes

  • 1 Lb. Ontario Baby Red Potatoes
  • 1 Cup Apple Cider Vinegar (Plus More for Brushing)
  • 2 Tsp. Salt (Plus More for Finishing)
  • 3 Tbsp. Extra Virgin Olive Oil
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • To Taste Freshly Cracked Black Pepper
  • To Garnish Flaked Salt
  • To Garnish Thinly Sliced Chives

Instructions

  1. Step 1

    Place potatoes in a large pot filled with cold water. Add vinegar & salt. Bring to a gentle simmer & cook until potatoes are fork tender. Strain & transfer to a baking sheet.
  2. Step 2

    Using a fork or the bottom of a glass, smash each potato to flatten them. Drizzle both sides with oil. Season with garlic powder, onion powder, salt & pepper.
  3. Step 3

    Roast at 425(f) degrees for 20 minutes. Brush lightly with vinegar. Rotate & roasted for an additional 20 minutes, until golden & crispy.
  4. Step 4

    Finish with flaked salt & chives. Serve immediately!
