Salt and Vinegar Smashed Potatoes

- 1 Lb. Ontario Baby Red Potatoes
- 1 Cup Apple Cider Vinegar (Plus More for Brushing)
- 2 Tsp. Salt (Plus More for Finishing)
- 3 Tbsp. Extra Virgin Olive Oil
- 1 Tsp. Garlic Powder
- 1 Tsp. Onion Powder
- To Taste Freshly Cracked Black Pepper
- To Garnish Flaked Salt
- To Garnish Thinly Sliced Chives
Instructions
Step 1
Place potatoes in a large pot filled with cold water. Add vinegar & salt. Bring to a gentle simmer & cook until potatoes are fork tender. Strain & transfer to a baking sheet.Step 2
Using a fork or the bottom of a glass, smash each potato to flatten them. Drizzle both sides with oil. Season with garlic powder, onion powder, salt & pepper.Step 3
Roast at 425(f) degrees for 20 minutes. Brush lightly with vinegar. Rotate & roasted for an additional 20 minutes, until golden & crispy.Step 4
Finish with flaked salt & chives. Serve immediately!
