Tomato Caprese Flatbread
There’s nothing quite like freshly melted mozzarella cheese over some tomatoes for a a homemade dinner that’s way better than delivery pizza. Juicy tomatoes with fresh basil and melted bocconcini on a crust that’s chewy and crisp fresh from the oven.

- 1 Cup Fresh Basil, Coarsely Chopped
- 2 Cloves Garlic, Minced
- To Taste Salt & Freshly Ground Black Pepper
- 1/4 Cup Olive Oil
- 1 Whole Wheat or Regular 12-Inch (30cm) Pizza Crust
- 3/4 Cup Part-Skim Mozzarella Cheese
- 3 Ontario Greenhouse Tomatoes, Sliced
- 4 Light or Regular Bocconcini Balls (100g), Sliced
Instructions
Step 1
Preheat oven to 400°F (200°C).Step 2
In food processor, combine basil, garlic, salt and pepper. Pulse until chopped. With machine running, slowly pour in oil and process until blended.Step 3
Place crust on pizza pan. Spread 1/2 basil mixture evenly over crust. Sprinkle with mozzarella cheese. Arrange tomato and bocconcini slices overlapping over mozzarella.Step 4
Bake for 7 to 10 minutes or until cheese starts to melt. Turn on broiler and continue baking until golden, about 5 minutes.Step 5
Remove from oven and drizzle with remaining basil mixture and black pepper. Serve warm cut in wedges.
